Ingredients
- 250g dry green lentils, rinsed
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 can (400g) diced tomatoes
- 1.2L vegetable broth
- 1 tsp olive oil
- 1 tsp cumin, 1 tsp paprika, salt and pepper
Instructions

Heat olive oil in a large pot and sauté onion, carrot and celery for 5 minutes.

Add garlic and spices and cook 1 minute until fragrant.

Stir in lentils, tomatoes and broth.

Bring to a boil, then simmer covered for 30 minutes until lentils are tender.

Season to taste and serve with a squeeze of lemon.
