Ingredients
- 4 large bell peppers, tops cut and seeded
- 500g lean ground turkey (93%)
- 150g brown rice (dry)
- 1 onion, diced
- 2 garlic cloves, minced
- 1 can (400g) crushed tomatoes
- 1 tsp olive oil
- 1 tsp Italian seasoning, salt, pepper
- 60g shredded mozzarella (optional)
Instructions

Cook brown rice according to package instructions.

Heat oil in a pan, sauté onion and garlic 3 minutes.

Add ground turkey and cook until browned. Stir in tomatoes and seasoning.

Mix in cooked rice and stuff into peppers. Place in a baking dish.

Cover and bake at 190°C / 375°F for 30 min, uncover, top with cheese and bake 5 more.
