Ingredients

  • 150g chicken breast
  • 3 cups romaine lettuce, chopped
  • 20g grated Parmesan
  • 20g whole-grain croutons
  • 3 tbsp non-fat Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1 anchovy fillet (optional), minced
  • 1 small garlic clove, grated
  • Salt and black pepper

Instructions

    Season chicken with salt and pepper, then grill 6 minutes per side. Rest 5 min, then slice.
