Ingredients
- 150g chicken breast
- 3 cups romaine lettuce, chopped
- 20g grated Parmesan
- 20g whole-grain croutons
- 3 tbsp non-fat Greek yogurt
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- 1 anchovy fillet (optional), minced
- 1 small garlic clove, grated
- Salt and black pepper

Season chicken with salt and pepper, then grill 6 minutes per side. Rest 5 min, then slice.
